You might be able to get those Instagram messages back, depending on how they disappeared.
First check your DMs and look at Message Requests - sometimes chats from people you don’t follow get pushed there.
Also, see if the convo was in Vanish Mode (the screen will look darker). If you turn Vanish Mode off, the chat goes back to normal as long as it wasn’t fully erased.

If your device has a backup from before the messages were deleted, there’s a chance you can recover them by restoring that earlier backup.
OS: You have an option to restore the backup, allowing you to restore the state of the message. This would only be possible if you have an encrypted iCloud backup or local iTunes/Finder backup that included the Instagram data.
Friend, you need to be a little cautious and back up your current content first, to avoid erasing current data.
Android: If you previously made a full-device encrypted backup (or used a manufacturer cloud backup that includes app data), restoring it might bring the messages back.
Instagram stores most message information on its servers rather than inside the app. Because of this, many backups don’t capture DM history, so the success rate for this method is generally limited.
